Banana Coffee Cake

Wait til you taste this delicious coffee cake! Add a special topping of pecans to make it even better!


1 pkg. (8 oz.) cream cheese, softened
1/2 c. butter or margarine, softened
1-1/4 c. sugar
2 eggs
1 cup mashed ripe bananas (about 3 medium)
1 tsp. vanilla extract
2-1/4 cups all-purpose flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda


1 c. chopped pecans
2 T. sugar
1 tsp. ground cinnamon


Beat the cream cheese, butter, and sugar in a medium mixing bowl. Add the eggs one at a time, beating well after each addition. Add the bananas and vanilla. Combine the flour, baking powder, and baking soda; gradually add to the creamed mixture.

Combine topping ingredients; add half to the batter. Transfer to a greased 13 x 9 x 2baking pan. Sprinkle with the remaining topping. Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Cherry Coffee Cake

A simple recipe to start your day off right.


1 1/2 cups cherries, pitted and halved
2 tablespoons all-purpose flour
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
2/3 cup vegetable oil
2 eggs
1 cup white sugar
1 teaspoon vanilla extract
1 cup milk


Preheat oven to 325 degrees F (165 degrees C). Grease and lightly flour a 10 inch tube pan. Place cherries in a bowl and toss gently with 2 tablespoons flour. Set aside.

Stir together the flour, salt, baking powder, and cinnamon in a medium bowl. Beat together the oil, eggs, sugar, vanilla extract, and milk until smooth in a large mixing bowl. Stir in the flour mixture until smooth. Fold in the cherries. Pour batter into prepared pan.

Bake in preheated oven until toothpick inserted into cake comes out clean, about 60 minutes. Cool in pan 10 minutes, then turn out onto a serving plate or wire rack.
